Salmon Chowder

Ingredients

  • 4 diced potatoes
  • 4 diced carrots
  • 2 diced onions
  • 1 and 1/2 quarts water
  • 1/2 lb. cooked and diced bacon
  • 1/2 tsp. Cayenne pepper
  • 1 tsp. black pepper
  • 1 lb. salmon in bite size pieces (bone and skin removed)
  • 1 pint heavy cream
  • 1 can cream corn
  • 1/2 cup butter
  • 1 1/2 tsp. salt

Directions

    In a covered pot boil potatoes, carrots and onions in water for 20 minutes.

    Add bacon and boil 10 more minutes. Add peppers and boil 10 more minutes.

    Add salmon and reduce heat to low. Cook 20 minutes.

    Add corn, butter, and salt and continue to simmer until well-blended and heated through.

    Do not boil.
