- 2 Tbsp. unsalted butter
- 3/4 c. minced onion
- 1 (6 1/2 oz.) can salmon or 1/2 lb. cooked salmon steak, skinned and boned
- 1/2 tsp. salt
- 1/4 tsp. white pepper
- 1 Tbsp. lemon juice
- 1 Tbsp. flour
- 8 oz. boiling potatoes, cooked and cubed
- 2 1/2 c. milk
- snipped fresh dill or dried dill weed
Directions

1If using canned salmon, discard skin and dark meat.

2Cook onions in butter about 5 minutes.

3Add salmon, salt, pepper and lemon juice.

4Add flour mixed with 1 tablespoon of the milk and stir to mix.

5Add potatoes and milk.

6Bring to a boil, stirring constantly.

7Reduce heat and simmer 10 minutes. Garnish with dill.
