Salmon Chowder

  • 2 Tbsp. unsalted butter
  • 3/4 c. minced onion
  • 1 (6 1/2 oz.) can salmon or 1/2 lb. cooked salmon steak, skinned and boned
  • 1/2 tsp. salt
  • 1/4 tsp. white pepper
  • 1 Tbsp. lemon juice
  • 1 Tbsp. flour
  • 8 oz. boiling potatoes, cooked and cubed
  • 2 1/2 c. milk
  • snipped fresh dill or dried dill weed

Directions

    If using canned salmon, discard skin and dark meat.

    Cook onions in butter about 5 minutes.

    Add salmon, salt, pepper and lemon juice.

    Add flour mixed with 1 tablespoon of the milk and stir to mix.

    Add potatoes and milk.

    Bring to a boil, stirring constantly.

    Reduce heat and simmer 10 minutes. Garnish with dill.
