Salmon Corn Chowder

- 1/4 c. margarine
- 1 large onion, chopped
- 1 c. diced celery
- 1 clove garlic, minced
- 2 Tbsp. flour
- 3 1/2 c. chicken broth
- 2 c. half and half
- 1 can creamed corn (17 oz.)
- 1/2 tsp. salt
- 1/4 tsp. white pepper
- 1 can pink or red salmon (15 1/2 oz.), drained and flaked
Directions

1Melt margarine in large, heavy saucepan over medium heat.

2Add onion, celery and garlic.

3Cook 4 to 5 minutes.

4Stir in flour until blended.

5Gradually add 1 cup broth.

6Stir until boiling and thickened.

7Stir in remaining broth, half and half, corn, salt and pepper.

8Simmer, uncovered, for 15 minutes, but do not boil. Remove from heat.

9Add salmon.
