Salmon Creole

Ingredients

  • 1 (1 lb.) can red salmon
  • 1 small onion, chopped fine
  • 1 green pepper, chopped fine
  • 1 (1 lb.) can tomatoes, drained
  • 2 eggs, slightly beaten
  • 1/2 tsp. salt
  • 1/2 tsp. chili powder
  • pinch of black pepper
  • 1 c. bread crumbs
  • 1 Tbsp. margarine

    Remove bone and skin from salmon and flake.

    Combine all ingredients, except bread crumbs.

    Melt margarine in saucepan. Add bread crumbs and stir to coat.

    Add half of crumbs to mixture and combine.

    Turn into 9 x 9-inch greased casserole pan. Sprinkle with remaining crumbs.

    Bake at 350° for 45 minutes.
