- 1 Tbsp. margarine
- 1/2 small onion, diced
- 2 Tbsp. green pepper, diced
- 1 can red salmon
- 1 c. cooked rice
- 1 can cream of mushroom soup
- 1 c. dry bread crumbs
- 2 Tbsp. sliced almonds
Directions

1Spray 1 1/2-quart casserole with nonstick oil.

2Set aside. Melt margarine; cook onions and green peppers until soft.

3Drain and save salmon liquid.

4Mix salmon, rice, onions and green peppers.

5Add milk to salmon liquid to make 2/3 cup of liquid. Combine with soup and mix until blended.

6Cover bottom of casserole with 1/2 cup bread crumbs.

7Place one-half salmon mixture over crumbs evenly.

8Cover with one-half soup mixture. Repeat salmon/soup layer and cover with remaining crumbs.

9Melt 2 tablespoons margarine and drizzle over crumbs.

10Top with almonds. Bake at 350° for 45 minutes.

11Makes six 1-cup servings.
