- 1 lb salmon fillet
- flour
- 3 tablespoons butter
- 1/3 cup dry vermouth or 1/3 cup white wine
- 1 tablespoon Dijon mustard
- 2 teaspoons capers
- 1/2 teaspoon garlic salt
- 1/4 cup heavy cream
Directions

1Dust salmon lightly with flour.

2In large skillet, melt butter over medium high heat.

3Add salmon (skin side up for fillets).

4Cook 3 minutes.

5Mix together wine, mustard, capers and garlic salt.

6Turn salmon; cook 2 minutes.

7Add wine mixture.

8Cook 2 minutes until fish flakes easily with a fork.

9Remove salmon, add heavy cream into skillet.

10Boil briefly to thicken.

11Serve over salmon.
