  • 1 medium Russet potato, peeled and sliced

  • 2 Tbsp. safflower oil
  • 1 large clove garlic, minced
  • 1/2 c. minced onion
  • 1/3 c. finely chopped celery
  • 2 Tbsp. chopped pimiento
  • 2 Tbsp. diced green pepper
  • 6 Tbsp. heavy cream
  • 1/2 tsp. salt
  • 1/4 tsp. ground white pepper
  • 1/4 c. minced fresh parsley
  • 1 1/2 c. cooked, flaked salmon (10 oz.)
