- 2 c. salmon, flaked
- 3 eggs, separated
- 1/2 c. bread crumbs
- buttered bread crumbs for topping
- 1/2 c. diced celery
- 1/4 c. butter
- 1 Tbsp. lemon juice
- salt and pepper
Directions

1Drain and flake the salmon.

2Mix together the lemon juice, salt and pepper and add to the salmon.

3Add the beaten egg yolks, bread crumbs, melted butter and celery.

4Fold in stiffly beaten egg whites and mix lightly.

5Pour salmon mixture into greased mold and cover with buttered bread crumbs; set the mold in a pan of hot water.

6Bake in a 350° oven for 30 minutes; unmold.
