  • 4 cans chicken broth
  • 6 leeks, split and cut into 1-inch pieces
  • 1 1/2 tsp. salt
  • 1/8 tsp. pepper
  • 1 c. Minute rice
  • 1 c. cooked chicken, cut in thin strips
  • 2 Tbsp. minced parsley

Directions

    Combine broth, leeks, salt and pepper in large saucepan. Bring to a boil.

    Reduce heat and simmer 15 minutes or until leeks are tender.

    Add chicken and rice.

    Cover and remove from heat. Let stand 5 minutes.

    Sprinkle with parsley.

    Makes 8 servings.
