- 4 c. cooked or canned salmon
- 2 Tbsp. lemon juice
- 1 c. milk
- 3 c. soft bread crumbs
- 2 eggs, beaten
- 1/4 c. minced onion
- 1/2 tsp. salt
- 1/4 tsp. pepper
- 1 Tbsp. parsley flakes (dried, optional)
Directions

1In a large bowl, sprinkle lemon juice over salmon.

2In a medium size bowl, combine milk, bread crumbs, eggs, onion, salt, pepper and parsley.

3Pour over salmon and blend well.

4Pour into a greased, microwave-safe loaf pan.

5Heat, uncovered, on full power 10 minutes.

6Cool 5 minutes.

7Place on serving platter. Serves 4 to 6.
