Ingredients

  • 1 (1 lb.) can salmon (2 c.) or 2 c. flaked cooked salmon
  • 2 c. soft bread crumbs
  • 1/2 c. bottled milk or 1/4 c. evaporated milk
  • 1/4 c. water
  • 1 egg, well beaten
  • 1 Tbsp. minced parsley
  • 1 tsp. salt
  • few grains cayenne pepper
  • 2 Tbsp. melted butter

Directions

    Drain salmon, reserving liquid.

    Remove skin from salmon and flake.

    Combine with remaining ingredients.

    Turn into a greased or oiled 7 1/2 x 2 1/2-inch loaf pan and bake in a moderately hot oven of 375° for 40 minutes or until firm in center.

    Serve with 1 cup medium white sauce in the making of which the reserved salmon liquid has been used as part of the milk.

    Before serving sauce, stir in 2 tablespoons of ketchup.
