Ingredients

  • 2 c. canned salmon
  • 2 eggs, separated
  • 2 Tbsp. fat and 1/2 c. milk
  • 1/2 c. soft bread crumbs
  • 1 Tbsp. lemon juice or vinegar
  • 1 tsp. salt
  • 1/8 to 1/4 tsp. pepper
  • 1 Tbsp. chopped parsley

Directions

    Add the beaten egg yolks, bread crumbs, lemon juice and seasonings to the flaked salmon.

    Mix thoroughly and fold in beaten egg whites.

    Mold and bake about 1/2 hour in a 350° oven. Crumbs over loaf make it brown nicely.
