  • 1 can salmon (15 1/2 oz.)
  • 1 Tbsp. lemon juice
  • 1 tsp. salt
  • 2 eggs, well beaten
  • 1/2 c. milk
  • 1/4 c. chopped parsley
  • 2/3 c. chopped celery
  • 1 1/2 c. bread crumbs
  • 1/2 tsp. baking powder
  • 1/2 c. liquid (fish juice and water)

Directions

    Drain salmon; discard skin and bones.

    Save juice.

    Flake salmon and add remaining ingredients.

    Mix well.

    Pack firmly into a greased loaf pan.

    Bake at 350° for 30 to 40 minutes, until light brown and firm.
