  • 1 egg
  • 2 cans pink or red salmon, flaked (save juice)
  • 1/4 c. milk
  • 1 1/2 c. coarse cracker crumbs
  • 1 Tbsp. lemon juice or extract
  • 1 c. chopped onion
  • 1/8 tsp. salt and pepper

    Drain salmon and save juice.

    Add juice to the milk to make 3/4 cup of liquid.

    Heat oven to 350°.

    Grease a 9 x 5 x 3-inch loaf pan.

    Blend eggs, salmon and other ingredients.

    Spoon into pan and shape.

    Bake 45 minutes until top is golden and crisp. Serve hot or cold.
