- 1 egg
- 2 cans pink or red salmon, flaked (save juice)
- 1/4 c. milk
- 1 1/2 c. coarse cracker crumbs
- 1 Tbsp. lemon juice or extract
- 1 c. chopped onion
- 1/8 tsp. salt and pepper
Directions

1Drain salmon and save juice.

2Add juice to the milk to make 3/4 cup of liquid.

3Heat oven to 350°.

4Grease a 9 x 5 x 3-inch loaf pan.

5Blend eggs, salmon and other ingredients.

6Spoon into pan and shape.

7Bake 45 minutes until top is golden and crisp. Serve hot or cold.
