Salmon Loaf

Ingredients

  • 1 c. milk
  • 1/2 c. fine, dry bread crumbs
  • 1/2 tsp. salt
  • 1 lb. can salmon
  • 1 c. cream
  • 3 beaten eggs
  • 1 tsp. lemon juice
  • pepper to taste

Directions

    Heat milk to scalding in double boiler.

    Add bread crumbs and cook until a thin, smooth paste is formed.
  3. 3
    Add salt, then salmon which has been mashed to a pulp after all bones and undesirable portions have been removed, then add cream.

    Heat to scalding and pour over beaten eggs.

    Season with lemon juice and pepper and pour into buttered loaf pan.

    Set in another pan containing hot water and bake in a slow oven (325° to 350°) for 1 hour.

    Remove from oven.

    Let stand a few minutes.

    Unmold and serve on a hot platter and serve with Hollandaise Sauce.
