Salmon Loaf "Pudding"

  • 2 c. milk, scalded
  • 1 c. rice (1/2 c. cooked and drained)
  • 2 Tbsp. grated onion
  • 1 tsp. salt
  • 1/2 tsp. pepper
  • 1/2 tsp. sugar
  • 2 Tbsp. lemon juice
  • 3 Tbsp. chopped parsley
  • 3 eggs
  • 1 large can salmon, drained
  • 1/2 c. melted butter

Directions

    Combine milk, rice, onion, salt, pepper, sugar, lemon juice, salmon and parsley.

    Mix well.

    Beat eggs well and add to mixture. Pour into buttered casserole or oblong cake pan.

    Bake at 250° for 35 minutes or until firm and brown on top.

    Pour melted butter on top.

    Serve hot or cold.
