- 1 (15 1/2 oz.) can red salmon
- 1 (8 oz.) pkg. cream cheese, softened
- 1 Tbsp. lemon juice
- 2 tsp. grated onion
- 1/4 tsp. salt
- 1/4 tsp. liquid smoke
- 3/4 c. chopped pecans
- 3 Tbsp. minced fresh parsley
Directions

1Drain salmon; remove skin and bones.

2Flake salmon with a fork; add cream cheese, lemon juice, onion, salt and liquid smoke. Stir well.

3Chill mixture several hours or overnight.

4Shape salmon mixture into a log.

5Combine pecans and parsley; stir well. Roll salmon log in pecan mixture and chill several hours. Yields one 10-inch log.
