Salmon Mold

Ingredients

  • 2 pkg. plain gelatin
  • 1/2 c. boiling water
  • 1/2 c. mayonnaise
  • 2 cans salmon
  • 1 c. chopped celery
  • 4 Tbsp. chopped stuffed olives
  • 4 hard-boiled eggs, chopped
  • salt to taste
  • 1/2 tsp. paprika
  • 1 Tbsp. lemon juice

Directions

    Drain salmon; pick out bones and skin.

    Add celery, olives, hard-boiled eggs, salt, paprika and lemon juice.

    Dissolve gelatin in boiling water; cool.

    Blend in mayonnaise and pour over salmon mixture, stirring to coat.

    Pour into a wet mold (fish mold if available).

    Refrigerate for 6 hours.

    Serve on lettuce.
