Salmon Mousse

Ingredients
- 1 Tbsp. unflavored gelatin
- 1/4 c. cold water
- 1 1/2 tsp. salt
- 1 1/2 tsp. prepared mustard
- dash of cayenne pepper
- 2 egg yolks, slightly beaten
- 3/4 c. milk
- 1 1/2 Tbsp. melted butter or margarine
- 4 Tbsp. lemon juice
- 1 lb. can salmon, flaked (2 c.)
- lettuce
- mayonnaise
Directions

1Soften gelatin in cold water for 5 minutes.

2Combine salt, mustard, cayenne pepper, egg yolks and milk in top of a double boiler.

3Cook over hot (not boiling) water, stirring constantly until mixture thickens and coats back of spoon.

4Remove from heat; add melted butter, lemon juice and gelatin.

5Stir until gelatin is dissolved.

6Fold in flaked salmon.

7Turn into 1-quart mold which has been rinsed in cold water and chill until firm. Unmold on a bed of lettuce and serve with mayonnaise.

8Serves 4.
