Salmon Mousse

  • 1 tall (16 oz.) can salmon, drained
  • 1 envelope unflavored gelatin
  • 1/4 c. cold water
  • 1/2 c. boiling water
  • 1/2 c. mayonnaise
  • 1 Tbsp. lemon juice
  • 1 Tbsp. grated onion
  • 1/2 tsp. Tabasco
  • 1/4 tsp. paprika
  • 1/4 tsp. salt
  • 1 tsp. salt
  • 1/2 c. heavy cream

Directions

    Sprinkle gelatin on cold water to soften and add water to dissolve.

    Add mayonnaise, lemon juice, onion, Tabasco, paprika and salt.

    Remove skin and visible bone from salmon.

    Flake well. Add salmon to mixture and mix well.

    Fold in whipped cream.

    Pour into oiled mold and chill.
