Ingredients

  • 3 Tbsp. butter
  • 3 Tbsp. flour
  • 1/2 c. milk
  • 2 egg yolks
  • 1 c. fresh bread crumbs
  • flour
  • fine bread crumbs
  • 1 medium onion, chopped
  • 1 tsp. salt
  • 1/8 tsp. pepper
  • 1 (16 oz.) can salmon
  • 1 egg + 2 Tbsp. water, beat
  • hot deep fat for frying

Directions

    In a saucepan, melt butter and in it, saute onion for 5 minutes.

    Stir in flour, gradually stir in milk and cook over low heat until thickened, stirring constantly.

    Remove from heat and beat in salt, pepper and egg yolks.

    Stir in salmon and fresh bread crumbs.

    Chill.

    Shape mixture into 2-inch nuggets, roll in flour and dip in egg mixture and coat with dry bread crumbs.

    Fry in hot deep fat (375°) for 4 to 5 minutes or until golden brown. Drain on paper towel.

    Serve piping hot with favorite cream sauce. Serves 4.
