Ingredients
- 3 Tbsp. butter
- 3 Tbsp. flour
- 1/2 c. milk
- 2 egg yolks
- 1 c. fresh bread crumbs
- flour
- fine bread crumbs
- 1 medium onion, chopped
- 1 tsp. salt
- 1/8 tsp. pepper
- 1 (16 oz.) can salmon
- 1 egg + 2 Tbsp. water, beat
- hot deep fat for frying
Directions

1In a saucepan, melt butter and in it, saute onion for 5 minutes.

2Stir in flour, gradually stir in milk and cook over low heat until thickened, stirring constantly.

3Remove from heat and beat in salt, pepper and egg yolks.

4Stir in salmon and fresh bread crumbs.

5Chill.

6Shape mixture into 2-inch nuggets, roll in flour and dip in egg mixture and coat with dry bread crumbs.

7Fry in hot deep fat (375°) for 4 to 5 minutes or until golden brown. Drain on paper towel.

8Serve piping hot with favorite cream sauce. Serves 4.
