- 8 phyllo pastry sheets, thawed
- 2 -3 tablespoons butter, melted
- 14 cup chopped fresh parsley
- 4 (6 ounce) boneless skinless salmon fillets
- coarse salt
- ground pepper
- 1 13 tablespoons creamed horseradish
- 1 egg, beaten
Directions

1Preheat oven to 425.

2Lay 1 phyllo sheet on a clean work surface.

3Brush with melted butter; sprinkle with 1 tablespoon parsley.

4Top with another phyllo sheet.

5Season salmon fillets with salt and pepper.

6Place one fillet 3 inches from short end of dough; spread 1 teaspoon creamed horseradish on top.

7Make salmon packet: Carefully fold the end of the dough over one fillet; gently fold in both of the long sides of the dough.

8Roll salmon over folded sides to form packet.

9Repeat process, making four packets.

10Brush tops and sides of packets with egg.

11Place packets on a baking sheet; bake until golden brown, about 10 minutes.

12Serve hot.
