Salmon Pancakes

- 1 lb. can salmon
- 1 grated onion
- 1/4 c. bread crumbs
- 1/2 c. cold, mashed potatoes
- 1 egg, beaten
- 1/4 c. oil
Directions

1Combine grated onion with mashed potatoes.

2Add salmon and egg.

3Add bread crumbs to mixture so that it is firm, but not dry. Shape it flat on large spatula and slide it into preheated oil in frying pan.

4Fry about 1 minute on each side until brown.

5Serve hot.

6(Can use leftover cooked fish instead of salmon.)
