- 14 oz. salmon fillet
- 1/2 c. finely chopped red pepper
- 1/2 c. finely chopped red onion
- 1/2 c. mayonnaise
- 2 Tbsp. lemon juice
- 2 large eggs
- 2 c. Italian bread crumbs
- pinch of season salt
- olive oil
Directions

1In a bowl, flake salmon. Mix in remaining ingredients except for olive oil. Take a handful of the mixture and form into a ball. In a frying pan, warm olive oil. Place ball into oil and let brown on one side. Roll ball over and flatten with spatula. Cook until dark brown on both sides.
