- 1 can pink salmon
- 1 egg
- 1/3 scallion, diced
- 1/2 c. bread crumbs
- 1 Tbsp. parsley flakes
- hot sauce
- green pepper
- salt and pepper
Directions

1Save salmon juice; remove most of the bones.

2Scramble eggs well.

3Put the salmon in bowl with onion, bread crumbs and parsley flakes.

4Mix well.

5If dry, pour a little juice from the salmon into mix.

6Make small patties (about 8).

7Fry 10 pieces of fat back meat; save grease.

8Fry 4 cakes at a time until golden brown.

9Eat it by itself or serve over rice or make sandwich.

10Makes about 8 cakes.
