Salmon Pesto

  • 1 12 lbs skinless salmon fillet, cut into 4 equal pieces (the fish market should be able to do this for you)
  • 2 teaspoons olive oil
  • 1 12 tablespoons minced garlic (I even cheat and use the jarred minced garlic)
  • 1 (7 ounce) containerprepared refrigerated basil pesto (I like Buitoni's, found in the refrigerated section of the supermarket where you find the fresh past)

    Preheat oven to 350 degrees F.

    Rinse the salmon fillets under cold water and pat dry.

    Brush the fillets with the olive oil and place in 8-inch square baking dish.

    Sprinkle the minced garlic over the salmon fillets.

    Then, spread an even amount of the pesto sauce over the salmon fillets, making sure that they are well covered.

    Place the baking dish, uncovered, into the preheated oven and bake, without turning, for about 15 minutes, or until fish flakes easily with a fork.

    Serve immediately, while still hot.
