- pastry shell
- 1 (7 3/4 oz.) can salmon, drained
- 6 oz. cream cheese
- 2 Tbsp. lemon juice
- 1/4 tsp. salt
- 1/2 c. heavy cream
- 4 eggs
Directions

1Drain salmon, reserving liquid.

2Sprinkle salmon chunks over bottom of pastry shell. Combine cream cheese and lemon juice. Gradually beat in reserved liquid from salmon, adding salt and cream. Beat the egg yolks lightly and stir into cream cheese mixture.

3Beat egg whites until stiff, not dry. Fold gently into egg yolk, cream cheese mixture.

4Spoon over salmon and bake at 375° for 45 minutes.

5May garnish with pimento, if desired.
