Salmon Ring(Microwave)

  • 2 beaten eggs
  • 1 (1 lb.) can red salmon, drained and flaked
  • 1 c. fine dry bread crumbs
  • 1/2 c. chopped celery
  • 1/4 c. chopped green pepper
  • 2 Tbsp. minced onion (or 2 tsp. instant minced onion)
  • 1 Tbsp. lemon juice
  • 3/4 c. milk

Directions

    In a 1 1/2-quart casserole, combine all ingredients and mix well.

    Move mixture away from center and place glass in center to make the ring shape.

    Cook, uncovered, 8 minutes or until mixture around glass is set.

    Remove glass and invert onto a serving plate.

    Makes 4 servings.
