Salmon Salad

- 6 cans (1 lb. cans) salmon
- 1 lb. celery, diced
- 5 lb. potatoes, boiled and diced
- 1 1/2 heads lettuce
- 1/2 gal. mayonnaise
- 1 1/2 green peppers
- 1 1/2 sweet peppers
- 3 lemons
Directions

1Cool the cans of salmon and empty contents into a mixing bowl. Be sure to add all the oil in the can.

2Chop salmon fine and mix with the potatoes.

3Soak the diced celery in cold water for 1 hour. Chop up the peppers and add to the mixture.

4Add the mayonnaise and thoroughly mix. Garnish with sprigs of parsley or lettuce and serve cold on lettuce leaves with the lemons cut in thin slices and laid across the top of the salad.
