Salmon Salad

Ingredients
- 1/3 cup Red pepper, diced
- 1/3 cup Cucumber, diced
- 1/4 cup Red onion, diced
- 1/3 cup Shredded carrots
- 1 large Hard boiled egg, Peeled and crushed
- 4 oz Salmon filet (cooked)
- 2 tbsp Mayonnaise (or miracle whip)
- 1 Lemon juice
- 1 Salt and pepper
- 1 dash Cayenne pepper seasoning
Directions

1Cook salmon as directed on package.

2Flake pieces and let it cool.

3In a large bowl, combine red peppers, cucumbers, onions, carrots, mayonnaise, salt and pepper.

4Add a dash of cayenne pepper if desired.

5Add cooked salmon and crushed boiled egg to bowl and mix gently.

6Add lemon juice to taste.

7Can be served as is, on a sandwich or over some leafy greens :)
