- 34 lb skinless fillet salmon
- 1 large cucumber, peeled, seeded, and chopped
- 1 large red bell pepper, seeded and chopped
- 4 scallions, chopped
- 12 lemon, juice of (or 3T. lemon juice)
- 3 tablespoons extra virgin olive oil
Directions

1Preheat oven to 350.

2Place the salmon in a medium baking dish and bake, covered, until cooked through, about 15 minutes.

3Let stand until cooled.

4In a medium bowl, mix the cucumber, bell pepper, scallions, lemon juice, and olive oil together.

5Add the baked salmon, flaking the meat with a fork, and mix until well combined.

6Season with salt and pepper.
