Salmon Salad

  • 2 c. cooked rice
  • 2 medium green onions, sliced
  • 2 ribs celery, sliced diagonally
  • 1/3 c. prepared Italian dressing
  • 1 (15 1/2 oz.) can pink salmon, drained and broken up in chunks
  • 4 or 5 large lettuce leaves
  • 2 green peppers, cut in strips

Directions

    Mix rice, onions, celery and Italian dressing. Add salmon; toss gently to mix. Spoon onto lettuce lined platter; garnish with green pepper. Chill at least 1 hour before serving.
