- 2 c. cooked rice
- 2 medium green onions, sliced
- 2 ribs celery, sliced diagonally
- 1/3 c. prepared Italian dressing
- 1 (15 1/2 oz.) can pink salmon, drained and broken up in chunks
- 4 or 5 large lettuce leaves
- 2 green peppers, cut in strips
Directions

1Mix rice, onions, celery and Italian dressing. Add salmon; toss gently to mix. Spoon onto lettuce lined platter; garnish with green pepper. Chill at least 1 hour before serving.
