  • 4 to 6 thick salmon steaks
  • herb seasoning
  • juice of medium lemon
  • 2 Tbsp. extra virgin olive oil
  • 2 Tbsp. oat or whole wheat flour
  • 1 1/2 c. plain yogurt
  • 2 large sliced sweet onions
  • 1 Tbsp. dried parsley

    Heat oven to 400°.

    Rinse fish.

    Place in large casserole dish and season.

    Pour lemon juice over.

    Heat oil in small saucepan and stir in flour.

    Add yogurt and stir until boiling.

    Remove from heat.

    Arrange onions over steaks.

    Pour sauce over it all. Bake for 15 minutes.

    Uncover.

    Bake 15 more minutes.

    Check by fork. Sprinkle over the dried parsley.
