Ingredients

  • 2 c. coarsely chopped, seeded tomatoes (about 1 1/4 lb.)
  • 2 green onions with tops, sliced
  • 1 clove garlic, minced
  • 1 to 2 tsp. minced, seeded jalapeno or Serrano chili peppers
  • 1 Tbsp. olive or vegetable oil
  • 2 to 3 tsp. lime juice
  • 8 to 10 sprigs fresh cilantro, minced
  • 1/2 tsp. salt to taste
  • 1/2 tsp. sugar to taste
  • 1/4 tsp. black pepper

Directions

    Combine tomatoes, green onions, garlic, pepper, oil and lime juice in a medium bowl.

    Stir in cilantro, if desired.

    Season with salt, sugar and pepper.

    Adjust seasonings to taste, adding lime juice or chili pepper, if desired.
