- 2 pounds Large tomatoes diced
- 2 cups Corn kernels
- 1 can Kidney beans or cannelini beans
- 2 teaspoons Lemon juice
- 2 cloves Minced garlic
- 5 heads Small hot chili peppers
- 1 head Onion (medium)
- 2 tablespoons Cilantro
Directions

1Blend tomatoes, garlic, onion, lemon juice and chili peppers in a food processor.

2Note:for chunkier salsa, set aside some of the diced tomato and add it to the pot without blending it.

3Transfer mixture to a pot, ad corn, beans, cilantro.

4Cook for 10 minutes, until sauce is thickened.

5Let cool and serve
