  • 2 pounds Large tomatoes diced
  • 2 cups Corn kernels
  • 1 can Kidney beans or cannelini beans
  • 2 teaspoons Lemon juice
  • 2 cloves Minced garlic
  • 5 heads Small hot chili peppers
  • 1 head Onion (medium)
  • 2 tablespoons Cilantro

Directions

    Blend tomatoes, garlic, onion, lemon juice and chili peppers in a food processor.

    Note:for chunkier salsa, set aside some of the diced tomato and add it to the pot without blending it.

    Transfer mixture to a pot, ad corn, beans, cilantro.

    Cook for 10 minutes, until sauce is thickened.

    Let cool and serve
