  • 4 large tomatoes, coarsely chopped
  • 1 small onion, finely chopped
  • 1 small green pepper, seeded and diced
  • 1 clove fresh minced garlic
  • 2 Tbs fresh lemon juice
  • 2 tsp minced fresh coriander
  • 2 tsp minced fresh parsley
  • 1/2 tsp salt
  • 1/2 tsp pepper
  • 2 Tbs flour
  • 1/2 tsp garlic powder
  • 1/2 tsp salt
  • 1/2 tsp pepper
  • 6 boneless chicken breasts (each 1/2 inch thick)
  • Oil for frying
  • Parsley sprigs and lemons slices for garnish

Directions

    In a medium bowl, mix together the tomatoes, onion, green pepper, garlic, lemon juice, coriander, parsley, salt, and pepper. Set aside in refrigerator for at least two hours.

    Preheat oven to 350 degrees.

    In a separate bowl, mix together the flour, garlic powder, salt, and pepper. Dredge the chicken in the dry mixture, then saute in oil until the chicken turns slightly brown. Place the chicken in a shallow greased baking pan and bake for 30 minutes or until done to taste. Remove the chicken from the oven and place on a serving platter. Decorate with parsley sprigs and lemon slices. Serve hot with salsa on the side.
