- 1 Tbsp. oil
- 1 lb. chicken breasts
- 1 onion, chopped
- 1 green pepper, chopped
- 10 oz. pkg. frozen sweet corn
- 1 c. chicken broth
- 1 c. salsa
- 1 1/2 c. Minute rice
- 1/2 c. shredded Cheddar
Directions

1Cube chicken breasts.

2Saute the onion, green pepper and chicken in the oil.

3Cook until chicken is cooked.

4Add corn, chicken broth and salsa.

5Bring to a boil.

6Add the Minute rice. Stir; cover and remove from heat.

7Let stand 5 minutes.

8Fluff up, then sprinkle on the cheese.

9Cover for 2 more minutes until the cheese melts.

10Serves 4.
