Salsa Chili

  • 1 Tbsp. oil
  • 3/4 lb. boneless pork, cubed
  • 1/2 c. chopped onion
  • 2 (16 oz.) jars salsa
  • 2 (15 oz.) cans spicy chili beans
  • shredded lettuce
  • shredded Cheddar
  • 1/2 c. sour cream
  • 1 (4 oz.) can chopped green chilies

Directions

    Brown onion and pork in oil in skillet or Dutch oven until pork is no longer pink.

    Stir in salsa and beans.

    Cook 30 to 40 minutes.

    Stir occasionally.

    Ladle into bowls and add lettuce, Cheddar cheese, sour cream and green chilies.

    Makes 6 (1 1/4-cup) servings.
