  • 1 12 cups flour
  • 12 cup cornmeal
  • 1 teaspoon baking powder
  • 1 teaspoon salt
  • 2 (3 ounce) packages cream cheese, softened
  • 6 eggs
  • 1 cup milk
  • 14 cup butter, melted
  • 1 (15 1/2 ounce) can whole kernel corn, drained
  • 1 cup salsa
  • 12 cup onion, chopped
  • sour cream
  • salsa

Directions

    Combine flour, cornmeal, baking powder and salt; set aside.

    In mixing bowl, beat cream cheese and eggs; add milk and butter.

    Add the dry ingredients just until moistened.

    Fold in the corn, salsa and onions.

    Pour batter by 1 /4 cupfuls onto greased hot griddle.

    Turn when bubbles form on top; cook until the second side is golden brown.

    Serve with additional sour cream and salsa, if desired.
