Ingredients

  • 16 c. chopped skinned tomatoes
  • 2 c. chopped onion
  • 1 to 3 jalapenos
  • 5 Tbsp. canning salt
  • 1 c. vinegar
  • 2 c. chopped green pepper
  • 4 to 6 garlic, minced
  • 2 Tbsp. pepper
  • 3 Tbsp. sugar
  • 1/2 c. cornstarch, mixed with 1/4 c. water

    Bring the first 9 ingredients to a boil.

    Add the cornstarch mixture to the salsa to thicken.

    Put into pint jars and process 15 minutes in a hot water bath.

    Hot, but good!
