- 4 c. chopped onions
- 4 c. chopped celery
- 4 to 6 finely chopped jalapeno peppers (2 to 3 inches long)
- 1 c. red wine vinegar
- 8 tsp. salt
- 1/2 tsp. pepper
Directions

1Mix all ingredients; simmer for 1 hour.

2Stir occasionally. Pour into 6 quart jars and seal, then process in pressure canner at 5 pounds for 10 minutes.
