Ingredients

  • 32 medium tomatoes, peeled and chopped
  • 4 c. chopped onions
  • 4 c. chopped celery
  • 4 to 6 finely chopped jalapeno peppers (2 to 3 inches long)
  • 1 c. red wine vinegar
  • 8 tsp. salt
  • 1/2 tsp. pepper

Directions

    Mix all ingredients; simmer for 1 hour.

    Stir occasionally. Pour into 6 quart jars and seal, then process in pressure canner at 5 pounds for 10 minutes.
