  • 34 lb tomatillo
  • 1 jalapeno, stemmed
  • 1 small onion, quartered
  • 4 cloves garlic
  • 1 tablespoon salt
  • 1 teaspoon dried cilantro
  • 2 limes, juice of

Directions

    simmer tomatillos, onion, jalapeno, garlic with salt in 3 to4 cups water for 6 to 10 minutes until tomatillos are soft.

    blend the vegs with the cilantro and lime juice and about 1/4 cup of the cooking liquid to the coarseness you like.

    taste and adjust the seasoning with more lime juice, salt,or cilantro.
