- 2 medium potatoes
- 3 Tbsp. white corn meal
- 1 tsp. salt
- 1 tsp. baking powder
- 1/2 tsp. soda
- 1/2 c. warm water
- 1 c. scalded milk
Directions

1Peel and slice potatoes in quart jar.

2Add corn meal, salt, baking powder and soda.

3Pour warm water and scalded milk over mixture.

4Put lid on jar.

5Place jar in electric oven.

6Turn control just until oven clicks on.

7Let stand overnight or 12 to 15 hours, until contents are fermented.

8Remove potatoes from starter and make the sponge.
