Ingredients

  • 1 3 lb chicken
  • 2 lb yucca rout, peeled and cut into cubes
  • 1 lb yam peeled and cut into cubes
  • 2 large plantains peeled and cut into slices (not too ripe)
  • 1 bunch green onions chopped
  • 3 carrots cut into bite sized pieces
  • 3 ears corn or 1 small can corn
  • 1/2 cup cilantro
  • water or chicken broth
  • salt and pepper to taste

    Put all ingredients except salt, pepper and corn into a large soup pot

    Add enough broth to cover

    bring to boil, reduce heat and simmer for 1 hr.

    remove chicken and discard skin and debone
  5. 5
    break meat into bite sized pieces

    add corn and seasoning

    simmer for 20 minutes more
