  • 2-3 tbsp very good canola oil (I prefer La Tourangelle)
  • 1 lb pork shoulder, pulled
  • 1/2 cup crystallised ginger
  • 1 Red Delicious apple, peeled, cored and thinly sliced
  • 1 cup dried cherries
  • 2-3 tbsp good clover honey
  • Juice of 1/2 orange
  • 1-2 tsp good Kentucky Bourbon
  • Sea salt
  • Black pepper
  • 1-1/2 cups very good barbeque sauce (I prefer Blue Front Bar-B-Q Hot)
