- 1 pound Ground Sirloin
- 1 clove Garlic, Minced
- 13 cups Carrots, Chopped
- 1 whole Onion, Diced
- 4 whole Bell Peppers
- 1 can (14.5 Oz. Can) Diced Tomatoes, Drained
- 4 whole Pitted Green Olives, Sliced
- 2 Tablespoons Parsley, Chopped
- 1 teaspoon Salt
- 1 teaspoon Black Pepper
- 1/2 teaspoons Paprika
- 1/4 teaspoons Dried Thyme
- 1/2 cups Cooked Brown Rice
- 1 cup Mozzarella Cheese
- 4 pinches Parmesan Cheese
Directions

1Add beef, garlic, carrots, and onion to a large skillet.

2Cook till beef is browned and veggies are tender.

3Meanwhile, cut off tops of bell peppers and clean out the seeds.

4When beef mixture is finished add tomatoes, olives, parsley, salt, pepper, paprika, and thyme.

5Mix well and add the rice.

6Allow mixture to simmer for about 10 minutes.

7Stuff peppers with beef mixture, and place upright in a small casserole dish.

8Top with mozzarella cheese.

9Bake at 350 degrees for about 25-30 minutes.

10Sprinkle parmesan cheese and parsley on top.
