Satay Chicken

  • 1 1/3 pounds boneless chicken thighs trimmed, cut into strips
  • 1 lime
  • 2/3 cup cilantro chopped plus more leaves, to serve
  • 2 tablespoons vegetable oil
  • 2 onions sliced
  • 8 ounces satay sauce about 1 cup
  • 1/4 cup water
  • 1 bunch broccolini trimmed, separated
  • steamed rice to serve

Directions

    In a large bowl, combine chicken with zest, juice and chopped cilantro.

    Heat oil in a wok on high. Stir-fry onion for 2-3 minutes, until tender. Add chicken and stir-fry for 4-5 minutes, until almost cooked through.

    Add sauce and water to wok. Bring to a simmer and cook, stirring, for 3-4 minutes.

    Toss in broccolini and simmer for 1-2 minutes. Serve with rice, garnished with cilantro leaves.
