- 1 1/3 pounds boneless chicken thighs trimmed, cut into strips
- 1 lime
- 2/3 cup cilantro chopped plus more leaves, to serve
- 2 tablespoons vegetable oil
- 2 onions sliced
- 8 ounces satay sauce about 1 cup
- 1/4 cup water
- 1 bunch broccolini trimmed, separated
- steamed rice to serve
Directions

1In a large bowl, combine chicken with zest, juice and chopped cilantro.

2Heat oil in a wok on high. Stir-fry onion for 2-3 minutes, until tender. Add chicken and stir-fry for 4-5 minutes, until almost cooked through.

3Add sauce and water to wok. Bring to a simmer and cook, stirring, for 3-4 minutes.

4Toss in broccolini and simmer for 1-2 minutes. Serve with rice, garnished with cilantro leaves.
