Saturday Night Omelet

Ingredients

  • 7 eggs plus a splash of milk - beaten
  • 1 bell pepper - sliced
  • 1/2 onion - sliced
  • 2 cloves garlic - chopped
  • 1 tablespoon olives pimento, - chopped
  • 1 tablespoon sun dried tomatoes - chopped
  • 1 quart button mushrooms - sliced
  • 1/2 cup monterey jack cheese - grated
  • 1/4 cup Parmesan cheese - grated
  • 1 dash salt
  • 1 dash black pepper
  • 1 dash chili powder
  • 1 dash garlic powder
  • olive oil Drizzle of

Directions

    Heat a large frying pan with a drizzle of olive oil. Add the veggies and saute until the onion is transparent and a nice color is on the veggies.

    Crack the eggs in a bowl with a splash of milk, the seasonings and the parmesan cheese and beat.

    Pour into the pan with the sauteed veggies and scatter the grated Monterey cheese on top.

    Lightly cover the omelet until set.
