- 4 lb. beef bottom round pot roast
- 1 pt. vinegar
- water
- 4 bay leaves
- 12 peppercorns
- 4 cloves
- 1 small bunch carrots, sliced
- 6 onions, sliced
- 1 Tbsp. sugar
- 12 gingersnaps
- salt and pepper
Directions

1Place meat, vinegar and water to cover roast and seasonings in a bowl.

2Marinate 3 days (turning daily).

3Remove roast to Dutch oven and brown.

4Add carrots, onions and 1 cup marinade.

5Cook 4 hours in a 350° oven.

6Remove roast and vegetables.

7Add sugar and crumbled gingersnaps to liquid.

8Cook until thickened.

9Add more vinegar, salt and pepper, if desired.

10Spoon some gravy over meat. Serve the rest separately.
