  • red wine to cover
  • 1 Large, cut-up Onion
  • 2 Cut-up Carrots
  • 1 pint Heavy cream
  • 2 bay leaves
  • 2 Tblspns Whole Peppercorns

    Place beef roast in a stainless steel or plastic container and

    marinate the meat for five days, turning once daily. After 5 days

    remove the mead from the marinade and roast. Strain the marinade and

    add to the pan juices fro the gravy.
